Ingredients

  • 4 6-oz catfish filets
  • 1 1/2 cups buttermilk
  • 1 1/2 cups cornmeal
  • 1 tbsp granulated garlic
  • 1 tsp onion powder
  • 1/2 - 1 tsp cayenne pepper
  • 1 tsp white or black pepper
  • 2 tsp salt (adjust to taste)

Spicy Tartar Sauce

  • 1 cup mayonnaise
  • 1 tbsp finely diced onion
  • 1/2 to 1 tsp mustard sauce
  • 3 tbsp hot pepper relish
  • 1 tbsp granulated garlic
  • salt and pepper to taste
  • dash of hot sauce

Instructions

  • Preheat a deep-fryer to 375 degrees F. Alternatively, in a large, sauce pan pour vegetable oil half way.
  • Mix together cornmeal, garlic, onion powder, cayenne, salt and pepper
  • Dip each strip into the butter milk and then cover with the breading
  • Deep fry the fish a few pieces at a time. If the pieces are too big, cut into smaller sizes. Move them around so they don't stick.
  • Fry until brown and crispy, about 3-4 minutes. May vary by size.
  • Remove fish from fryer and place onto a cooling rack to ensure crispiness.
  • Sprinkle with lemon juice. Serve with tarter sauce (instructions below).

Spicy Tartar Sauce

  • In a serving bowl, combine mayonnaise, garlic, hot pepper relish, onions, mustards, hot sauce, and salt and pepper.
  • Cover with plastic wrap and let the flavors mellow in the refrigerator for at least 1 hour before serving.
