Southern Fried Catfish

Servings 4 pieces
Ingredients
- 4 6-oz catfish filets
- 1 1/2 cups buttermilk
- 1 1/2 cups cornmeal
- 1 tbsp granulated garlic
- 1 tsp onion powder
- 1/2 - 1 tsp cayenne pepper
- 1 tsp white or black pepper
- 2 tsp salt (adjust to taste)
Spicy Tartar Sauce
- 1 cup mayonnaise
- 1 tbsp finely diced onion
- 1/2 to 1 tsp mustard sauce
- 3 tbsp hot pepper relish
- 1 tbsp granulated garlic
- salt and pepper to taste
- dash of hot sauce
Instructions
- Preheat a deep-fryer to 375 degrees F. Alternatively, in a large, sauce pan pour vegetable oil half way.
- Mix together cornmeal, garlic, onion powder, cayenne, salt and pepper
- Dip each strip into the butter milk and then cover with the breading
- Deep fry the fish a few pieces at a time. If the pieces are too big, cut into smaller sizes. Move them around so they don't stick.
- Fry until brown and crispy, about 3-4 minutes. May vary by size.
- Remove fish from fryer and place onto a cooling rack to ensure crispiness.
- Sprinkle with lemon juice. Serve with tarter sauce (instructions below).
Spicy Tartar Sauce
- In a serving bowl, combine mayonnaise, garlic, hot pepper relish, onions, mustards, hot sauce, and salt and pepper.
- Cover with plastic wrap and let the flavors mellow in the refrigerator for at least 1 hour before serving.
